Softstick or Cinnamomum Verum has thin, birch-like layers. The true cinnamon has a much softer and delicate flavor than Cassia. Best used where its delicate, slightly citrusy, taste is not overwhelmed by other strong flavors. Easy to grind at home, unlike hardstick.
